HOT BACON DRESSING FOR DANDELION

2 quarts fresh dandelion greens, cleaned
¼ lb bacon, cut into 1-inch pieces
2 eggs ½ cup water
½ cup sugar ½ cup cider vinegar
Sliced, hard-boiled eggs


Wash and pick over the dandelion, and cut into medium to fine pieces. Fry the bacon until crisp. Beat eggs, add sugar, water, vinegar. Stir ths mixture with the hot fried bacon. Stir over low heat until the dressing thickens, then remove from heat. Pour over greens. Mix well, garnish with hard-boiled eggs.
